Brioche Monte Cristo Sandwich

Preparation
- In a large bowl, beat eggs, cream, herbes de Provence, salte and pepper. Reserve.
- Mix all ingredients for the spicy sauce. Reserve.
- Spread Dijon mustard on 4 slices of cheese flavoured brioche. Add ham, dry sausage, provolone cheese, and put the other slice of brioche on top.
- In a non-stick pan, warm the butter.
- Dip each sandwich in the egg mix, thoroughly dampening the brioche slices. Transfer the sandwich into the pan.
- Cook for 3 minutes on each side, or until the brioche sandwich is golden brown.
- Serve with spicy sauce.

- 4 large eggs
- 1 cup of 15% cream
- 1 tbsp of Herbes de Provence
- 8 slices of cheese flavoured brioche loaf, about 1 cm thick
- 2 tbsp Dijon mustard
- 125 g of white ham
- 125 g of dry sausage (any flavor), sliced thin
- 4 slices of provolone cheese
- 2 tbsp of butter
- Salt and pepper
Spicy sauce :
- ½ cup of mayonnaise
- 1 tbsp of worcestershire sauce
- 1 tsp of sriracha sauce, to taste
- Salt and pepper to taste
