Our team of master bakers is passionate about baking artisan style breads and desserts in our industrial bakery.
We foster a culture of innovation, encouraging reseach and development of new recipes, improvements in baking processes, and creative packaging. The Mad Bakers is committed to using high quality local flour, which gives our breads and desserts a superior flavour and texture. Using local flour also reduces our carbon footprint and is part of our sustainability project.
Located in Joliette, Quebec, Canada, our facility is state of the art, SQF certified, peanut free and kosher.
Gourmet Breads
Our breads are prepared with wholesome ingredients including high quality local flour, and never any artificial preservatives or colour.
We bake the breads in a custom-made volcanic stone oven, which gives it a thin caramelized crust. Our baking process includes long fermentation times and gentle treatment of the dough, which gives the bread a high moisture content, a wonderful airy crumb and an incredible taste.
Our rigorous processes, quality control, and culture of innovation have enabled us to automate traditional baking techniques on our high technology bread lines, resulting in consistent, gourmet breads.
Our artisan-style bread is fully cooked and is perfect for in-store bakeries and food services. We also offer our bread pre-packaged grocery shelf ready, as well as freezer programs.
Desserts
Our specialty in the dessert category is pâte à choux: cream puffs, eclairs, paris brest, profiteroles, chouquettes, and more. Our pâte à choux pastry is crisp and tasty, and our offering includes various flavors of 35% cream and custard fillings, and chocolate topping options. We have programs available for private label and for branded frozen desserts.
